In a mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 1 tablespoon of sugar. In a small bowl, dissolve 2 ¼ teaspoons of active dry yeast in 1 cup of warm water. Let the yeast mixture sit for 5 minutes until it becomes frothy. Gradually pour the yeast mixture into the dry ingredients and knead the dough until smooth and elastic.
Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm spot for about 1 hour, until it doubles in size. This will give the dough a light and fluffy texture.
While the dough is rising, grate 1 cup of cheddar cheese and 1 cup of mozzarella cheese. Mix them together in a bowl and set aside. You can also add a touch of jalapeno for extra flavor if you like.

Remove them with a slotted spoon and place them on a baking sheet lined with parchment paper. Brush each pretzel bite with beaten egg and sprinkle with coarse salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes, or until the pretzel bites turn golden brown.
