In a large mixing bowl, cream together 1 cup (225g) of softened butter and 3/4 cup (150g) of granulated sugar until fluffy. Then, add in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt. Mix it all together until well combined. Now, gradually add in 2 cups (250g) of all-purpose flour and mix until a soft dough forms.
Take about 1 tablespoon of dough and roll it into a ball. Place the dough balls onto a baking sheet lined with parchment paper, spaced about 2 inches apart. With your thumb, make an indentation in the center of each cookie.
Fill each indentation with about 1/2 teaspoon of your favorite jam or jelly. Raspberry, strawberry, or grape work great for that classic PB&J taste. If you're feeling adventurous, try mixing it up with a different flavor!
Pop the baking sheet into the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are lightly golden. Once baked, remove them from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
