Before we can jump into cheesy heaven, we need to gather our ingredients. Here's what you'll need: 2 cups of all-purpose flour, 2 teaspoons of instant yeast, 1 teaspoon of salt, 1 teaspoon of sugar, 1 cup of warm water, 2 cups of shredded cheese (cheddar, mozzarella, or a mix of your favorites), and some coarse salt for sprinkling.
In a large mixing bowl, combine the flour, yeast, salt, and sugar. Mix them together, then gradually add the warm water. Stir everything until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic.
Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it doubles in size. Use this time to catch up on your favorite TV show or read some random fun facts about cheese!
Once the dough has risen, punch it down to release any air bubbles. Divide the dough into small pieces, about the size of a ping pong ball. Roll each piece into a rope and then cut it into bite-sized chunks. Set them aside on a baking sheet.
In a large pot, bring water to a boil. Add a tablespoon of baking soda to the boiling water. Drop a few pretzel bites into the boiling water and let them cook for about 30 seconds. Remove them with a slotted spoon and place them back on the baking sheet. Repeat this process with the remaining pretzel bites.
Preheat your oven to 425°F (220°C). Sprinkle some coarse salt over the pretzel bites, then bake them for about 15 minutes, or until they turn golden brown. Take them out of the oven and generously sprinkle the shredded cheese over each pretzel bite.
Turn on your broiler and place the pretzel bites with cheese under it. Keep a close eye on them as the cheese melts and starts to bubble. Once the cheese is gooey and slightly browned, remove the pretzel bites from the oven. Let them cool for a minute or two, then dig in and savor the deliciousness!
