In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of salt, and 2 ¼ teaspoons of instant yeast. Mix well. Add 1 cup of warm water and 2 tablespoons of melted butter. Stir until a soft dough forms.
Transfer the dough to a lightly floured surface. Knead for about 5 minutes until the dough is smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
In a medium bowl, combine 1 ½ cups of shredded cheddar cheese, ¼ cup of grated Parmesan cheese, and 2 tablespoons of finely chopped fresh herbs (such as parsley or chives). Mix well.
Divide the risen dough into 8 equal pieces. Roll each piece into a 12-inch rope. Flatten each rope with a rolling pin. Spoon about 2 tablespoons of the cheese filling onto the center of each flattened rope. Fold the dough over the filling and pinch the edges to seal. Twist the stuffed dough into a pretzel shape.
Preheat your oven to 400°F (200°C). Bring a large pot of water to a boil and add 1/4 cup of baking soda. Boil each pretzel for 1 minute, then transfer them to a baking sheet lined with parchment paper. Sprinkle the pretzels with coarse salt. Bake for 15-18 minutes or until golden brown. Allow them to cool for a few minutes before indulging in their cheesy goodness!
