Preheat the oven

Preheat your oven to 350°F (175°C). This is the perfect temperature to ensure the tartlets bake to a delicious golden brown.

Prepare the tartlet crusts

In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, 1/2 teaspoon of ground turmeric, and a pinch of salt. Mix well. Add 1/2 cup of cold unsalted butter, cut into small pieces. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Press the mixture into mini tartlet pans, making sure to cover the bottoms and sides evenly. Place the filled tartlet pans on a baking sheet.

Bake the tartlet crusts

Place the baking sheet with the tartlet pans in the preheated oven. Bake for 10-12 minutes, or until the crusts are golden brown. Keep an eye on them as they bake, as they can brown quickly towards the end. Once baked, remove from the oven and set aside to cool.

Prepare the tropical filling

In a mixing bowl, combine 1 cup of coconut milk, 1/4 cup of honey, 1 tablespoon of cornstarch, and 1 teaspoon of vanilla extract. Whisk until well blended. Heat the mixture in a saucepan over medium heat, stirring continuously until it thickens. Remove from heat and let it cool slightly.

Fill the tartlet crusts

Once the tartlet crusts have cooled, spoon the tropical filling into each crust, filling them almost to the top. Smooth the tops with a spatula or the back of a spoon for an even finish.
