To make a kimchi quesadilla, you'll need the following items: tortillas (2), kimchi (1/2 cup), shredded cheese (1/2 cup), sliced green onions (2 tablespoons), and cooking oil (1 tablespoon).
Drain any excess liquid from the kimchi. Optionally, if you prefer a milder flavor, rinse the kimchi under cold water and pat it dry with a paper towel. Chop the kimchi into smaller pieces to make it easier to distribute in the quesadilla.
Heat a pan over medium heat and add the cooking oil. Place a tortilla on the pan, then evenly spread half of the shredded cheese on top. Add the chopped kimchi and sliced green onions, making sure they cover the cheese evenly. Sprinkle the remaining cheese on top. Lastly, place the second tortilla on top like a sandwich.
Cook the quesadilla for about 2-3 minutes on one side, until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula, and cook for another 2-3 minutes to ensure even browning on the other side. Keep an eye on it to prevent burning!
Once the cheese has melted and the tortillas are nice and crispy, remove the quesadilla from the pan. Allow it to cool for a minute or two, then slice it into wedges. Serve your kimchi quesadilla with a side of sour cream, guacamole, or your favorite dipping sauce. Enjoy the delicious blend of flavors!
