Gather all the ingredients you'll need: 1 pound of ground beef, 1 onion (diced), 2 cloves of garlic (minced), 1 bell pepper (diced), 1 can of black beans (drained and rinsed), 1 can of corn (drained), 1 cup of salsa, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1 teaspoon of oregano, salt and pepper to taste, 8 large tortillas, and 2 cups of shredded cheese (Mexican blend or cheddar).
Heat a large skillet over medium heat and add the ground beef. Cook it until browned, breaking it up into small pieces with a spatula. Drain any excess grease from the skillet.
To the skillet with the cooked ground beef, add the diced onion, minced garlic, and diced bell pepper. Sauté them until they're softened and aromatic. Sprinkle in the cumin, chili powder, and oregano, and season with salt and pepper to taste.
Stir in the black beans and corn, and make sure everything is well mixed. Cook for an additional 5 minutes to let the flavors meld together. Remove the skillet from heat and set it aside.
Preheat your oven to 375°F (190°C). Grab a baking dish and grease it lightly with cooking spray or a bit of oil. Lay 4 tortillas at the bottom of the dish, overlapping them slightly. Spoon half of the beef and vegetable mixture over the tortillas, spreading it out evenly. Sprinkle half of the shredded cheese on top.
Place another layer of 4 tortillas on top of the beef and cheese. Repeat the process by adding the remaining beef and vegetable mixture, followed by the remaining shredded cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly. Let it cool for a few minutes before cutting into it. Serve your Mexican lasagna hot and garnish with your favorite toppings like fresh cilantro, diced tomatoes, or a dollop of sour cream. Take a big bite and savor the fiesta of flavors!
