Start by carefully peeling the citrus fruits of your choice, such as oranges, lemons, or grapefruits. Try to remove as much of the pith (the white part) as possible, as it can add bitterness to the lollipops.
Place the citrus peels in a saucepan and cover them with water. Bring the water to a boil and let the peels simmer for about 10 minutes. This helps to soften the peels and remove any residual bitterness.
In a separate saucepan, combine 1 cup of sugar and 1/2 cup of water. Stir the mixture over medium heat until the sugar has completely dissolved. You can also add a squeeze of fresh citrus juice for an extra burst of flavor.
