In a small bowl, whisk together 1/4 cup of pineapple juice, 2 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of honey, and 1 teaspoon of grated ginger. Set aside.
In a large salad bowl, combine 6 cups of mixed greens, 1 cup of cubed fresh pineapple, 1/2 cup of halved cherry tomatoes, 1/4 cup of chopped red onion, and 1/4 cup of chopped macadamia nuts. Toss to combine.
Pour the prepared dressing over the salad and gently toss to coat the ingredients. Be sure not to overdress, as you don't want to drown those gorgeous greens!
