To create this heavenly marinade, you'll need the following items: soy sauce, hoisin sauce, honey, sesame oil, rice vinegar, garlic, ginger, and a pinch of Chinese five-spice powder.
In a bowl, combine 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 2 tablespoons of honey, 1 tablespoon of sesame oil, 1 tablespoon of rice vinegar, 2 cloves of minced garlic, 1 teaspoon of grated ginger, and a pinch of Chinese five-spice powder. Whisk everything together until well blended.
Place your Peking Duck in a shallow dish and pour the marinade over it, ensuring every inch is coated. Cover the dish and refrigerate for at least 2 hours, or ideally overnight, to allow the flavors to penetrate the meat.
Preheat your oven to 425°F (220°C). Remove the duck from the marinade and place it on a baking rack set inside a roasting pan. Roast the duck for approximately 45 minutes, until the skin turns crispy and golden brown.
Once the duck is roasted to perfection, let it rest for about 10 minutes. This allows the juices to redistribute, resulting in moist, succulent meat. Carve the duck and serve it with your favorite accompaniments, such as steamed pancakes, cucumber, scallions, and hoisin sauce.
