Preheat your oven to 425°F (220°C). Cut a medium-sized cauliflower head into florets. Rinse the florets under cold water and pat them dry using a kitchen towel.
In a large mixing bowl, combine 1/2 cup of all-purpose flour, 1/2 cup of milk (you can use almond milk for a vegan option), 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and a pinch of salt and pepper. Whisk until smooth. Toss the cauliflower florets in the buffalo sauce of your choice until they're fully coated.
Line a baking sheet with parchment paper and spread the buffalo cauliflower evenly. Bake for 20-25 minutes or until the cauliflower is crispy and golden brown. While the cauliflower is baking, prepare the pizza dough.
If you're using store-bought dough, follow the instructions on the packaging. If you prefer making your own dough, combine 2 1/4 cups of all-purpose flour, 2 1/4 teaspoons of instant yeast, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 3/4 cup of warm water in a mixing bowl. Stir until the ingredients come together, then knead the dough on a lightly floured surface until it becomes smooth and elastic.
Preheat your oven to 450°F (230°C). Roll out the pizza dough to your desired thickness and shape. If using store-bought dough, follow the packaging instructions for rolling. Transfer the rolled dough onto a pizza stone or a baking sheet lined with parchment paper. Spread a layer of your favorite marinara or pizza sauce on the dough, leaving a small border around the edges. Arrange the buffalo cauliflower on top, followed by shredded mozzarella cheese and any additional toppings you desire. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.
