In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until well combined. Stir in the chocolate chips.
Take one ice cream cone and spoon about 2 tablespoons of the dough into the bottom of the cone. Use the back of a spoon to press the dough evenly along the sides, creating a cup shape. Repeat with the remaining ice cream cones.
Place the shaped cup cones on the prepared baking sheet and bake for 12-15 minutes, or until the edges are golden brown. Remove from the oven and let them cool completely on a wire rack.
Once the cup cones have cooled, melt some extra chocolate in a microwave-safe bowl. Dip the edges of the cup cones into the melted chocolate and let the excess drip off. You can also drizzle more melted chocolate on top for extra indulgence. Let the chocolate set before serving.
