Be careful not to overheat the chocolate or let it come into contact with water, as this can cause it to seize and become grainy. Also, make sure to allow enough time for the tarts to set in the refrigerator before serving to ensure they have the perfect texture.
First, preheat your oven to 350°F (175°C) and grease a tart pan. In a mixing bowl, combine 1 1/2 cups of crushed chocolate cookies and 1/4 cup of melted butter. Press the mixture into the bottom and sides of the tart pan to form the crust. Bake in the preheated oven for 10 minutes, then set aside to cool.
Next, place 8 ounces of dark chocolate in a heatproof bowl. Heat a pot of water over low heat until simmering. Place the bowl on top of the pot, making sure the bottom of the bowl doesn't touch the water. Stir the chocolate occasionally until fully melted and smooth. Remove it from the heat and let it cool slightly.
Once the melted chocolate has cooled slightly, transfer it to a piping bag fitted with a small round tip. Pipe a lace pattern onto the inside of each tart shell. You can get creative here and make different designs if you'd like!
Place the lace-patterned chocolate tarts in the refrigerator for at least 1 hour or until set. Once chilled, remove them from the tart pan and garnish with fresh berries or a dusting of cocoa powder, if desired. Serve and enjoy the elegant deliciousness!
