In a mixing bowl, cream together 1 cup of softened butter and 1 cup of white sugar until light and fluffy. Add 2 eggs and 2 teaspoons of vanilla extract, and mix until well combined. In a separate bowl, whisk together 2 and 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Take 2 tablespoons of cookie dough and roll it into a ball. Place the dough balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. To make the monster eyes, press a candy-coated chocolate in the center of each dough ball. Surround the chocolate with 3 or 4 small colored candies to create the iris and veins. Get creative with different colors!
Preheat your oven to 350°F (175°C). Bake the cookies for 10-12 minutes, or until the edges are golden brown. The centers may still be slightly soft, but they will firm up as they cool. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
