Gather all the necessary ingredients for your Sushi Pizza bites. You'll need sushi rice, nori sheets, sushi-grade salmon or tuna, cucumber, avocado, sesame seeds, mayonnaise, soy sauce, and wasabi. Don't worry if you don't have sushi-grade fish, you can always substitute it with cooked shrimp or imitation crab.
Follow the instructions on the package to cook the sushi rice. Once cooked, season it with vinegar, sugar, and salt to give it that traditional sushi rice flavor. Let the rice cool to room temperature before moving on to the next step.
Dice the sushi-grade salmon or tuna, cucumber, and avocado into small bite-sized pieces. Mix a bit of mayonnaise with wasabi to create a spicy mayo sauce for an extra kick. Set aside the toppings and sauce for assembly.
Take a handful of sushi rice and shape it into small circles or squares to create the pizza bases. You can use a cookie cutter or simply shape them by hand. Place the rice bases on a greased baking sheet and lightly press them to flatten.
Spread a thin layer of the spicy mayo sauce on each sushi rice base. Then, arrange the diced salmon or tuna, cucumber, and avocado on top. Sprinkle sesame seeds for added crunch and flavor.
Preheat your oven to 350°F (175°C). Bake the Sushi Pizza bites for about 8-10 minutes or until the edges of the rice turn slightly golden. Remove from the oven and let them cool for a few minutes before serving. Top with a drizzle of soy sauce if desired.
