Gather the following ingredients: sushi rice, nori sheets, cucumber, avocado, carrot, red bell pepper, mango, and cooked crab or imitation crab. Cut the cucumber, avocado, carrot, bell pepper, and mango into thin strips.
Rinse 2 cups of sushi rice in cold water until the water runs clear. Cook the rice with 2 1/4 cups of water in a rice cooker or on the stovetop. Once the rice is cooked, let it cool to room temperature.
Lay a sheet of nori on a bamboo sushi mat. Wet your hands with water to prevent the rice from sticking. Spread a thin layer of sushi rice evenly on the nori, leaving a 1-inch space at the top. Arrange the cucumber, avocado, carrot, bell pepper, mango, and crab in a line across the rice.
Using the sushi mat, roll the nori tightly from the bottom, applying gentle pressure. Wet the top 1-inch space of the nori with water to seal the roll. Continue rolling until the entire nori is wrapped around the filling. Press the roll gently to ensure it holds its shape.
Using a sharp knife, slice the sushi roll into bite-sized pieces. Arrange the rainbow sushi rolls on a serving platter and garnish with sesame seeds or sliced green onions. Serve with soy sauce, wasabi, and pickled ginger.
