Take note
Before you embark on your Lemon Bar adventure, make sure to handle sharp objects with care (we're looking at you, knives) and always be cautious while working with hot ingredients. Don't forget to wash your hands and put on your baking apron to protect your stylish outfit!
First, preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish. In a medium bowl, combine 1 1/2 cups of all-purpose flour, 1/2 cup of powdered sugar, and a pinch of salt. Mix them together until well combined. Now, add 3/4 cup of cold unsalted butter, cut into small pieces. Using a pastry cutter or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
Transfer the crust mixture into the greased baking dish and press it down firmly with your fingers or the back of a spoon to create an even layer. Pop it into the preheated oven and bake for 15-20 minutes, or until the edges turn golden brown. While the crust is baking, move on to the next step!
In a large bowl, whisk together 1 1/2 cups of sugar, 1/4 cup of all-purpose flour, and 4 eggs until smooth and creamy. Now, squeeze the juice from 2 fresh lemons into the mixture and stir well. Don't forget to zest one of the lemons for an extra burst of flavor! Feel free to experiment by adding other fruity flavors like a hint of orange or the zest of a lime.
Once the crust has baked to perfection, carefully pour the lemon filling over the hot crust. Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and the top is slightly golden. Keep an eye on it, as you want the bars to have a nice jiggle without being overly wobbly.
Remove the Lemon Bars from the oven and let them cool completely in the baking dish. Once cooled, it's time to get creative! You can dust the bars with powdered sugar, drizzle them with a sweet glaze, or even sprinkle them with toasted coconut. The choice is yours! To add an extra special touch, place a lemon slice or zest curls on top for an elegant presentation.
