Preheat your oven to 400°F (200°C). Wash and trim 2 medium-sized beets, then wrap them individually in aluminum foil. Place the wrapped beets on a baking sheet and roast them in the oven for about 45-60 minutes, or until they're tender when pierced with a fork. Once roasted, remove the beets from the oven and let them cool.
Once the roasted beets have cooled, peel off their skin using your fingers (wear gloves if you want to keep your hands stain-free). Cut the beets into small chunks and put them in a blender or food processor. Blend until you have a smooth, vibrant beet puree.
In a small saucepan, combine 1 cup of milk (dairy or plant-based) and 1 tablespoon of the beet puree. Whisk the mixture until the beet puree is fully incorporated. Place the saucepan over medium heat and warm the milk, but avoid boiling it. Once heated, remove the saucepan from the heat.
Using a milk frother or a whisk, froth the pink beet milk until it becomes creamy and frothy. If you're using a whisk, vigorously whisk the milk back and forth until you achieve your desired frothy consistency.
Pour the frothy pink beet milk into your favorite mug. If desired, sprinkle some cinnamon or cocoa powder on top for an extra touch of flavor and beauty. Voila! Your Pink Beet Latte is ready to impress!
