Prepare the Ingredients

Gather all the ingredients you'll need for your Bunny Chow. This includes 2 tablespoons of cooking oil, 1 onion (chopped), 2 cloves of garlic (minced), 2 teaspoons of curry powder, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, 1/4 teaspoon of cayenne pepper, 1 can of diced tomatoes, 1 can of chickpeas (drained and rinsed), 1 cup of vegetable broth, 1 carrot (diced), 1 potato (peeled and diced), 1/2 cup of frozen peas, salt and pepper to taste, and 4 small round bread loaves.

Cook the Curry

Heat the cooking oil in a large pan or pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and fragrant. Sprinkle in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well to coat the onions and garlic with the spices. Cook for about 1 minute to let the flavors meld together. Then, add the diced tomatoes, chickpeas, vegetable broth, diced carrot, and potato. Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the vegetables are tender. Stir in the frozen peas and season with salt and pepper to taste.

Prepare the Bread Bowls

While the curry is cooking, prepare the bread bowls. Take each small round bread loaf and carefully cut off the top to create a lid. Hollow out the center, removing some of the bread to create a bowl shape. Save the bread pieces for dipping later!
