Gather all your ingredients so you have everything ready. You'll need chicken, chorizo, onion, bell pepper, garlic, tomatoes, saffron, chicken broth, rice, peas, olive oil, salt, and pepper.
Heat some olive oil in a large skillet or paella pan over medium heat. Add the chicken and chorizo and cook until they are browned and cooked through.
Remove the chicken and chorizo from the skillet and set them aside. In the same skillet, add the onion, bell pepper, and garlic. Saute them until they are softened and fragrant.
Stir in the diced tomatoes and rice, making sure to coat the rice with the flavorful ingredients. Let it cook for a couple of minutes.
In a small bowl, dissolve the saffron in a bit of hot chicken broth. Pour this saffron-infused broth into the skillet and stir everything together.
Pour in the rest of the chicken broth and bring the mixture to a simmer. Cover the skillet and let it cook for about 15-20 minutes, or until the rice is tender and the flavors have melded together.
Add the peas to the skillet and gently stir them into the paella. Cook for another 2-3 minutes, or until the peas are heated through.
Scoop generous portions of the chicken and chorizo Spanish Paella onto plates. Serve it hot and garnish with fresh parsley or lemon wedges. ¡Buen provecho!
