In a large mixing bowl, combine 2 1/2 cups of all-purpose flour, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1 cup of cold unsalted butter. Cut the butter into small cubes and then use a pastry cutter or your hands to mix the ingredients together until the mixture resembles coarse crumbs. Gradually add 1/4 cup of ice water, mixing until the dough comes together. Divide the dough in half, shape each half into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
Peel, core, and slice 6-8 apples of your choice. Granny Smith, Honeycrisp, or Golden Delicious work well for this recipe. Toss the apple slices with 1/2 cup of granulated sugar, 1/4 cup of all-purpose flour, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, and a pinch of salt until well coated. Set aside.
Remove one dough disk from the refrigerator and let it sit at room temperature for about 5 minutes. On a floured surface, roll out the dough into a circle large enough to fit into a 9-inch pie dish. Carefully transfer the rolled-out dough into the pie dish and press it gently into the bottom and sides.
Pour the prepared apple filling into the pie dish, spreading it out evenly. Dot the top of the filling with 2 tablespoons of unsalted butter, cut into small pieces.
Remove the second dough disk from the refrigerator and roll it out into a circle. You can either place the whole crust on top of the filling, or cut it into strips for a lattice design. If using a whole crust, make sure to cut a few slits on the top to allow steam to escape during baking.
Preheat your oven to 425°F (220°C). Place the assembled pie onto a baking sheet to catch any drips. Bake for 15 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for another 40-45 minutes, or until the crust is golden brown and the apples are tender. Allow the pie to cool for at least 1 hour before serving. Serve warm with a scoop of vanilla ice cream, and enjoy!
