Start by making the pie crust. Combine flour, salt, and butter in a bowl, and mix until the mixture resembles coarse crumbs. Gradually add cold water and mix until a dough forms. Divide the dough in half, shape each half into a disc, and wrap them in plastic wrap. Chill the dough in the fridge for at least 1 hour.
Preheat your oven to 425°F (220°C). While the oven is warming up, peel, core, and slice your apples. Toss the apple slices with lemon juice, sugar, cinnamon, nutmeg, and a pinch of salt. Set aside.
