Gather all the necessary ingredients for your scrumptious toastie. You'll need: - 4 slices of bread (sourdough or whole wheat work great) - 2 cups of fresh spinach leaves - 1/2 cup of crumbled feta cheese - 2 tablespoons of olive oil - Salt and pepper to taste
In a pan over medium heat, add 1 tablespoon of olive oil. Once hot, add the spinach leaves and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste. Set the wilted spinach aside.
Take two slices of bread and place them on a clean surface. Sprinkle half of the crumbled feta cheese onto each slice. Divide the wilted spinach evenly between the two slices. Top with the remaining slices of bread to form sandwiches.
Heat a non-stick pan or sandwich press over medium heat. Brush the outside of each toastie with the remaining tablespoon of olive oil. Place the toasties in the pan and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
Remove the toasties from the pan and let them cool for a few moments. Cut them into halves or quarters, whatever floats your boat. Grab a plate, place your beautifully toasted creations on it, and enjoy the incredible combination of crispy bread, wilted spinach, and tangy feta. It's a taste sensation fit for both gods and mortals!
