Be careful when working with puff pastry, as it can be delicate and easy to tear. Also, be sure to handle the hot pastry cream with caution to avoid burns.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the puff pastry sheets on the lined baking sheet and bake them in the preheated oven for 15-20 minutes, or until puffed and golden brown.
In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt. Heat the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. Remove from heat and stir in the vanilla extract. Let the pastry cream cool for a few minutes.
Once the puff pastry sheets have cooled, cut them into rectangles of equal size. Place one rectangle on a serving plate and spread a generous layer of pastry cream on top. Repeat this layering process, ending with a puff pastry rectangle on top.
Refrigerate the Mille-Feuille for at least 1 hour to allow the flavors to meld together. Serve chilled and enjoy!
