Start by heating up your leftover chicken. You can do this in the microwave or on the stovetop. Make sure it's piping hot before proceeding.
Gather all the necessary ingredients: cooked rice, diced vegetables (such as carrots, peas, and onions), minced garlic, beaten eggs, soy sauce, and sesame oil. Dice the leftover chicken into bite-sized pieces.
In a large frying pan or wok, heat some oil over medium-high heat. Add the diced vegetables and minced garlic. Stir-fry until the vegetables are cooked to your liking. Remove them from the pan and set aside.
Using the same pan, add a bit more oil if needed and pour in the beaten eggs. Cook them, stirring occasionally, until they're scrambled and cooked through. Remove them from the pan and set aside.
In the same pan, add a little more oil and then the cooked rice. Use a spatula to break up any clumps and stir-fry the rice until it's heated through. This should take a few minutes.
Now it's time to bring all the flavors together! Add the sautéed vegetables, scrambled eggs, and diced leftover chicken to the pan with the rice. Pour in soy sauce and a drizzle of sesame oil for extra flavor. Stir everything together until well combined and heated through.
Give your Chicken Fried Rice a taste test and make any necessary adjustments. Add more soy sauce if it needs more saltiness, or a dash of pepper for some extra kick. Feel free to get creative and add your favorite spices or seasonings!
Time to dig in and enjoy the fruits of your labor! Transfer the Chicken Fried Rice to a serving dish and garnish with sliced green onions or chopped cilantro. Share with loved ones or savor it all for yourself!
