  • Pumpkin seeds 1/2 cup
  • Coconut flakes 1/2 cup
  • Flaxseeds 1/4 cup
  • Ground cinnamon 1 tablespoon
  • Ground ginger 1 teaspoon
  • Ground nutmeg 1/2 teaspoon

  • Coconut oil 1/4 cup
  • Pure maple syrup 1/4 cup

Mix the dry ingredients

In a large mixing bowl, combine 2 cups of rolled oats, 1 cup of chopped nuts, 1/2 cup of pumpkin seeds, 1/2 cup of coconut flakes, 1/4 cup of flaxseeds, 1 tablespoon of ground cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoon of ground nutmeg, and a pinch of salt. Give everything a good stir to make sure the spices are evenly distributed.

Whisk the wet ingredients

In a separate bowl, whisk together 1/4 cup of melted coconut oil, 1/4 cup of pure maple syrup, 1/4 cup of pumpkin puree, and 1 teaspoon of vanilla extract. Once well combined, pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.

Bake to golden perfection

Spread the granola mixture onto a baking sheet lined with parchment paper. Make sure it's in an even layer to ensure even baking. Pop it in a preheated oven at 325°F (160°C) and bake for 25-30 minutes, or until golden brown and fragrant. Stir the granola every 10 minutes to prevent uneven browning.
