Celebrate the flavors of fall with our spicy pumpkin pie grain-free granola. A cozy blend of pumpkin spice and crunchy perfection!
Take note
Be careful not to eat this granola straight out of the oven - it's hot!
In a large mixing bowl, combine 2 cups of rolled oats, 1 cup of chopped nuts, 1/2 cup of pumpkin seeds, 1/2 cup of coconut flakes, 1/4 cup of flaxseeds, 1 tablespoon of ground cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoon of ground nutmeg, and a pinch of salt. Give everything a good stir to make sure the spices are evenly distributed.
In a separate bowl, whisk together 1/4 cup of melted coconut oil, 1/4 cup of pure maple syrup, 1/4 cup of pumpkin puree, and 1 teaspoon of vanilla extract. Once well combined, pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
Spread the granola mixture onto a baking sheet lined with parchment paper. Make sure it's in an even layer to ensure even baking. Pop it in a preheated oven at 325°F (160°C) and bake for 25-30 minutes, or until golden brown and fragrant. Stir the granola every 10 minutes to prevent uneven browning.
Once the granola is done baking, remove it from the oven and let it cool completely on the baking sheet. This will help it get extra crunchy. Once cooled, transfer it to an airtight container for storage. Serve it with yogurt, milk, or enjoy it straight out of the jar!
