First things first, let's gather all the amazing ingredients we need for this superfood-packed granola. You'll need 2 cups of mixed nuts and seeds (such as almonds, cashews, pumpkin seeds, and sunflower seeds), 1 cup of unsweetened shredded coconut, 1/2 cup of dried cranberries or goji berries, 1/4 cup of chia seeds, 1/4 cup of coconut oil, 2 tablespoons of raw honey or maple syrup, 1 tablespoon of pure vanilla extract, and a pinch of salt. Phew, that's quite a list, but trust us, it's worth it!
Preheat your oven to 300°F (150°C). In a large mixing bowl, combine all the nuts, seeds, shredded coconut, dried cranberries or goji berries, and chia seeds. In a small saucepan, melt the coconut oil, honey or maple syrup, vanilla extract, and salt over low heat. Once melted and well mixed, pour the liquid mixture over the dry ingredients and stir until evenly coated.
Spread the mixture evenly on a lined baking sheet and bake in the preheated oven for 20-25 minutes, stirring halfway through. Keep an eye on it to prevent burning. The granola should turn golden brown and crisp up as it cools down. Once done, remove from the oven and let it cool completely. Don't worry if it's still a little soft; it will harden as it cools.
Once the granola has cooled, break it up into your desired chunkiness. You can make it into smaller or larger clusters, depending on your preference. Store the granola in an airtight container at room temperature for up to two weeks, but let's be honest, it probably won't last that long!
