Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine 2 cups of mixed nuts (such as almonds, cashews, and walnuts), 1 cup of unsweetened shredded coconut, 1/2 cup of sunflower seeds, 1/4 cup of chia seeds, and 1 teaspoon of cinnamon.
In a separate bowl, whisk together 1/4 cup of coconut oil, 1/4 cup of maple syrup, 1 tablespoon of orange zest, and 1 teaspoon of vanilla extract.
Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, or until golden brown, stirring halfway through to ensure even baking.
Remove the baking sheet from the oven and let the granola cool completely. Once cooled, mix in 1 cup of dried cranberries.
Transfer your tangy cranberry orange grain-free granola to an airtight container and enjoy it as a cereal with your favorite milk, or sprinkle it over yogurt or smoothie bowls. Yum!
