Before embarking on this granola-making adventure, gather the following ingredients: 2 cups of unsweetened shredded coconut, 1 cup of nuts of your choice (we recommend almonds or pecans), 1/2 cup of pumpkin seeds, 1/4 cup of honey or maple syrup, 2 tablespoons of melted coconut oil, 1 teaspoon of vanilla extract, and a pinch of salt.
Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper. This will ensure your granola bakes evenly and doesn't stick!
In a large bowl, combine the shredded coconut, nuts, pumpkin seeds, and salt. Mix everything together until well combined.
In a separate small bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract. Make sure everything is nicely blended.
Pour the sweet liquid mixture over the dry ingredients in the large bowl. Toss everything together until the dry ingredients are evenly coated with the sweet goodness.
Transfer the granola mixture onto the prepared baking sheet. Spread it out into an even layer to ensure everything bakes uniformly.
Pop the baking sheet into the preheated oven and let the granola toast for about 25-30 minutes or until golden brown. Give it a gentle stir halfway through to prevent burning and promote even toasting.
Once your granola is beautifully golden and toasted, remove it from the oven and let it cool completely. Once cooled, transfer it to an airtight container and store at room temperature. Enjoy it as a snack, sprinkle it on yogurt, or use it as a topping for ice cream!
