Chop 1 onion, 2 carrots, and 1 zucchini into bite-sized pieces. Also, finely mince 2 cloves of garlic.
Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden brown.
Sprinkle in 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground turmeric, and a pinch of cayenne pepper. Stir well to combine with the sautéed vegetables.
Now it's time to add the remaining vegetables. Toss in the chopped carrots and zucchini, along with 1 cup of canned chickpeas (drained and rinsed), 1 cup of diced tomatoes (canned or fresh), and 1 cup of vegetable broth.
Cover the pot with a lid and let the tagine simmer for 20-25 minutes, or until the vegetables are tender and the flavors have melded together. Serve hot and enjoy!
