In a mixing bowl, whisk together 6 large eggs, 1 cup of heavy cream, 1/4 cup of granulated sugar, 1 teaspoon of vanilla extract, and a pinch of salt. Set aside.
Arrange 8 slices of thick brioche or French bread in a single layer in a shallow baking dish. Pour the custard mixture evenly over the bread slices, making sure they are fully submerged. Let them soak for about 10 minutes, flipping them halfway through.
Heat a large non-stick skillet or griddle over medium heat. Add a pat of butter and let it melt. Carefully transfer the soaked bread slices to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
Once cooked, remove the French toast from the skillet and sprinkle about 1 teaspoon of granulated sugar on top of each slice. Using a blowtorch (or broil in the oven for a minute or two), caramelize the sugar until it forms a crispy, golden crust.
