In a mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 teaspoon of instant yeast, and 1/2 teaspoon of salt. Mix well.
Cut 6 tablespoons of unsalted butter into small pieces and add them to the flour mixture. Mix until the dough comes together. Cover the bowl with plastic wrap and refrigerate for 1 hour.
On a lightly floured surface, roll out the chilled dough into a rectangle, about 1/4 inch thick. Fold the dough into thirds, like a letter, then roll it out again. Repeat this process two more times.
Using a round cookie cutter, cut circles from the dough. Then, use a smaller round cookie cutter to remove the center of each circle, creating a ring shape. Place the cronut rings on a baking sheet lined with parchment paper.
Heat oil in a deep fryer or a large pot to 350°F (175°C). Carefully lower a few cronut rings into the hot oil using a slotted spoon or tongs. Fry for about 2 minutes on each side until golden brown. Remove and drain on a paper towel-lined plate. Repeat with the remaining cronut rings.
In a small bowl, mix 1 cup of powdered sugar with 2 tablespoons of milk and 1/2 teaspoon of vanilla extract until smooth. Dip each fried cronut ring into the glaze, allowing the excess to drip off. Sprinkle with your favorite toppings, such as rainbow sprinkles, crushed nuts, or shredded coconut.
Once the glaze has set, carefully insert a popsicle stick into the bottom of each cronut popsicle. Place them back on the baking sheet and freeze for at least 2 hours or until solid.
Once the cronut popsicles are frozen, they are ready to be enjoyed! Serve them cold and savor the delicious combination of flavors and textures.
