Fill a saucepan with water and bring it to a gentle simmer. Crack an egg into a small bowl or ramekin. Carefully slide the egg into the simmering water. Repeat with the remaining eggs. Allow the eggs to poach for about 3-4 minutes until the whites are set but the yolks are still soft.
In a heatproof bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and a pinch of salt. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Slowly whisk in 1/2 cup of melted butter, a little at a time, until the sauce thickens. Remove from heat and stir in a truffle oil or truffle paste to taste.
Split the English muffins in half and toast them until golden brown. You can also spread a small amount of truffle butter on the muffins for extra flavor if desired.
Place a toasted English muffin half on a plate. Top it with a slice of cooked ham or Canadian bacon. Carefully remove the poached eggs from the water using a slotted spoon and place one on top of the ham. Spoon the truffle-infused Hollandaise sauce generously over the egg. Repeat with the remaining muffin halves, ham, eggs, and sauce.
Sprinkle some finely chopped fresh chives or parsley over the Eggs Benedict for a pop of color and freshness. Serve immediately while everything is still warm and enjoy the luxurious flavors of the truffle!
