Poach the Eggs

Fill a saucepan with water and bring it to a gentle simmer. Crack an egg into a small bowl or ramekin. Carefully slide the egg into the simmering water. Repeat with the remaining eggs. Allow the eggs to poach for about 3-4 minutes until the whites are set but the yolks are still soft.

Prepare the Hollandaise Sauce

In a heatproof bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and a pinch of salt.
