Just a quick heads up before we get started - these doughnut bites are addictive. Seriously, once you take a bite, you won't be able to stop. Make sure to make a big batch, because they tend to disappear quickly!
In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of sugar, 1 packet (2 ¼ teaspoons) of instant dry yeast, and 1 teaspoon of salt. Mix them together until well combined. Then, add ¾ cup of warm water, 2 tablespoons of melted butter, and 1 beaten egg. Mix everything until a dough forms. If the dough is too sticky, add a little more flour. If it's too dry, add a splash of water. Knead the dough for about 5 minutes until it becomes smooth and elastic.
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour or until it doubles in size. While you wait, you can start prepping your everything bagel topping. Mix together 2 tablespoons of poppy seeds, 2 tablespoons of sesame seeds, 2 tablespoons of dried minced onion, 2 tablespoons of dried minced garlic, and 1 tablespoon of coarse salt in a small bowl. Set it aside for later.
Once the dough has doubled in size, punch it down to release the air. Lightly flour your work surface and roll the dough into a ½-inch thick rectangle. Use a round cookie cutter to cut out doughnut bites. If you don't have a cookie cutter, you can also use a glass to cut out circles. Don't forget to punch out the center of each doughnut bite with a smaller round object, like a bottle cap.
Fill a deep pot with about 2 inches of vegetable oil and heat it to 375°F (190°C). Carefully drop a few doughnut bites into the hot oil using a slotted spoon or tongs. Fry them for about 2-3 minutes per side or until they turn golden brown. Make sure not to overcrowd the pot - fry the doughnut bites in small batches.
As soon as the doughnut bites come out of the oil, transfer them to a plate lined with paper towels to drain excess oil. While they are still warm, roll them in the everything bagel topping mixture, making sure each bite is generously coated.
