In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of sugar, and 1/2 teaspoon of salt. Cut in 1/2 cup of cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Make a well in the center and pour in 3/4 cup of cold buttermilk. Stir until just combined, then turn the dough out onto a lightly floured surface. Gently knead the dough a few times until it comes together. Roll it out to about 3/4-inch thickness, then use a biscuit cutter to cut out biscuits. Place them on a baking sheet lined with parchment paper.
Preheat your oven to 425°F (220°C). Brush the tops of the biscuits with melted butter and sprinkle a pinch of salt over each one. Bake for 12-15 minutes, or until golden brown and fluffy. Remove from the oven and let them cool slightly while you prepare the gravy.
In a large skillet, cook 8 ounces of breakfast sausage over medium heat until browned and crumbled. Remove the sausage from the skillet, but leave the drippings behind. Add 2 tablespoons of flour to the drippings and cook, stirring constantly, for about 2 minutes, or until golden brown. Slowly pour in 2 cups of whole milk, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook for 5 minutes, or until thickened. Stir in the cooked sausage and season with salt and pepper to taste.
Split the warm biscuits in half and spoon the creamy gravy over the top. You can also serve additional sausage on the side if desired. Dig in and savor every fluffy bite of these mouthwatering biscuits and gravy!
