Next, add 8 ounces of vegan sausage crumbles and cook until browned. Sprinkle in 1/4 cup of all-purpose flour and stir well to coat everything. Slowly pour in 2 cups of plant-based milk, stirring constantly to avoid lumps. Continue cooking until the gravy thickens, about 5 minutes. Season with salt, pepper, and any additional herbs or spices you desire.
