Make the Biscuits

Preheat your oven to 450°F (230°C). In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of sugar, and 1/2 teaspoon of salt. Cut in 1/2 cup of cold unsalted butter until the mixture resembles coarse crumbs. Pour in 3/4 cup of milk and stir until just combined. Cook the Sausage

Heat a large skillet over medium heat and add 1 pound of ground sausage. Cook, stirring occasionally, until the sausage is browned and fully cooked. Remove the cooked sausage from the skillet, but keep the drippings in the pan.

Make the Gravy

In the same skillet with the sausage drippings, sprinkle 1/4 cup of all-purpose flour. Stir it continuously for about 1 minute to cook off the raw flour taste. Slowly pour in 2 cups of milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and continue to whisk until thickened, about 5 minutes. Season with salt and pepper to taste.

Combine and Serve

Return the cooked sausage to the skillet with the thickened gravy. Stir to combine and let it simmer for a few more minutes to allow the flavors to meld together. Split the biscuits in half and ladle the sausage gravy over them. Serve hot and enjoy!
