In a medium-sized bowl, combine 1 cup of finely diced apples, 2 tablespoons of brown sugar, 1 teaspoon of cinnamon, and a pinch of nutmeg. Mix well until the apples are coated in the sugar and spices.
Take 2 slices of bread (preferably brioche or challah) and spread a generous amount of cream cheese on one side of each slice. Next, spread about 2 tablespoons of the apple cinnamon filling on one slice of bread. Place the other slice on top, cream cheese side down, to make a sandwich.
In a shallow dish, whisk together 2 eggs, 1/4 cup of milk, and a dash of vanilla extract. Dip the stuffed sandwich into the egg mixture, making sure to coat both sides. Allow any excess mixture to drip off.
Heat a non-stick skillet or griddle over medium heat. Melt a tablespoon of butter in the pan and place the stuffed French Toast sandwich in. Cook for about 3-4 minutes per side, or until golden brown and the cream cheese filling is warm and gooey.
Once cooked, transfer the stuffed French Toast to a plate and dust with powdered sugar. You can also drizzle some maple syrup or honey on top for extra sweetness. Grab a fork, dive in, and savor every scrumptious bite!
