In a mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of matcha powder, 1 teaspoon of baking powder, and a pinch of salt. In a separate bowl, beat 1 egg and mix in 3/4 cup of milk and 1 teaspoon of vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Heat a non-stick pan over medium heat and ladle small portions of the batter onto the pan. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown. Remove from heat and set aside.
Take two cooled pancakes and place a scoop of your favorite ice cream flavor on one pancake. Top with the second pancake to create a sandwich. Gently press down to secure the ice cream. Repeat with the remaining pancakes and ice cream flavors. Optionally, you can roll the sides of the ice cream sandwiches in your favorite toppings for an extra tasty touch. Place the ice cream sandwiches in the freezer for at least 2 hours or until the ice cream is firm.
