In a mixing bowl, combine 1 cup of glutinous rice flour, 1/2 cup of sugar, and 2 tablespoons of matcha powder. Gradually add 3/4 cup of hot water while stirring continuously until a sticky dough forms.
Transfer the matcha mochi dough to a heatproof dish and smooth out the surface. Steam the dough over high heat for 20 minutes or until it becomes translucent and firm. Let it cool completely.
Dust a clean surface with cornstarch or potato starch to prevent sticking. Cut the cooled matcha mochi into small squares or circles. Roll each piece in starch to coat all sides.
Take a scoop of your favorite ice cream flavor (we recommend vanilla or matcha) and place it in the center of each matcha mochi square. Fold the mochi sides up and pinch them together to encase the ice cream.
Place your Meteor Matcha Mochi ice cream balls on a parchment-lined baking sheet and freeze for at least 2 hours or until firm. Serve them straight from the freezer and enjoy the cosmic, matcha-filled explosion of flavors!
