Chill out with our refreshing 'Matcha Green Tea Ice Cream' recipe! Beat the heat and indulge in a creamy, matcha-flavored treat.
Take note
Remember to use caution when handling hot ingredients and be sure to let the ice cream mixture cool completely before freezing.
In a blender, combine 2 cups of heavy cream, 1 cup of whole milk, 3/4 cup of granulated sugar, and 2 tablespoons of matcha green tea powder. Blend until smooth and well combined.
Pour the mixture into a saucepan and heat over medium heat. Stir continuously until the mixture begins to steam, but do not let it boil. Remove from heat.
In a separate bowl, whisk together 4 large egg yolks. Slowly pour the hot mixture into the egg yolks while whisking constantly. This will temper the eggs, preventing them from scrambling. Once combined, pour the mixture back into the saucepan.
Return the saucepan to low heat and cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5 minutes. Remove from heat and let it cool to room temperature.
Cover the custard with plastic wrap, making sure the wrap touches the surface of the custard to prevent a skin from forming. Chill the mixture in the refrigerator for at least 4 hours or overnight. Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions.
Transfer the churned ice cream into a lidded container and freeze for a few hours until firm. Serve your delicious matcha green tea ice cream in bowls or cones, and enjoy the creamy, cool goodness you've created!
