Be careful not to overfill the cannoli shells, as they might burst. Also, make sure to keep an eye on them while they're baking to prevent any burning.
Start by preheating your oven to 350°F (175°C). Roll out your puff pastry sheet on a lightly floured surface. Using a round cookie cutter or a drinking glass, cut out small circles from the pastry. Gently press each circle into the cups of a mini muffin tin, shaping them into miniature cups. Bake in the preheated oven for about 10-12 minutes or until golden brown. Once done, remove from the oven and let them cool completely.
In a medium bowl, mix together ricotta cheese, powdered sugar, and vanilla extract until well combined. To add an extra kick of flavor, you can also fold in some mini chocolate chips or finely chopped pistachios. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
Once the cannoli shells have cooled, it's time to fill them up! Take a small piping bag fitted with a star tip and fill it with the prepared cannoli filling. Carefully pipe the filling into each cooled cannoli shell, starting from one end and working your way to the other. Don't worry if some filling squeezes out, it just means you've made a generous cannoli!
