Preheat your oven to 425°F (220°C). Wash and scrub 4 medium-sized potatoes. Using a sharp knife, carefully slice the potatoes into thin round chips. Try to make them as evenly sized as possible for consistent baking.
Place the potato slices on a baking sheet lined with parchment paper. Drizzle them with olive oil and sprinkle with salt, pepper, and your favorite seasonings (such as paprika, garlic powder, or chili powder). Toss the potato chips gently to evenly coat them with the seasoning. Spread them out in a single layer on the baking sheet.
Pop the baking sheet into the preheated oven and bake for about 20-25 minutes, or until the potato chips turn golden brown and crispy. Keep an eye on them during the last few minutes to prevent burning.
Remove the baked potato chips from the oven and immediately sprinkle shredded cheese (cheddar, mozzarella, or a blend of your choice) over the top. Return the baking sheet to the oven for another 2-3 minutes, or until the cheese melts and becomes gooey and irresistible.
Once the cheesy goodness is melted to perfection, take out the baking sheet and let the loaded potato skin chips cool for a minute. Sprinkle your favorite toppings over them, such as crispy bacon bits, chopped green onions, or sour cream. Serve them hot and enjoy!
