Wash and dry the jalapeños. Cut off the stem end and slice each pepper in half lengthwise. Carefully remove the seeds and white membranes from the inside of the peppers. These are the spiciest parts, so removing them will help control the heat of the poppers.
In a small bowl, mix together cream cheese, shredded cheddar cheese, and any desired seasonings. Spoon the cream cheese mixture into each jalapeño half, filling them up to the brim. Be generous with the filling, as it will mellow out the spiciness of the peppers when cooked.

If grilling, cook for approximately 10-15 minutes, turning occasionally, until the bacon is cooked through.
