To make Peak's Pecan Pralines, you'll need the following ingredients: 2 cups of pecan halves, 1 cup of packed light brown sugar, 1 cup of granulated sugar, 1 cup of heavy cream, 2 tablespoons of unsalted butter, 1 teaspoon of vanilla extract, and a pinch of salt.
Spread the pecan halves onto a baking sheet in a single layer and toast them in a preheated oven at 350°F (175°C) for about 8-10 minutes until they become fragrant. Remove them from the oven and set aside.
In a medium-sized saucepan, combine the brown sugar, granulated sugar, heavy cream, butter, vanilla extract, and salt. Place the saucepan over medium heat and stir until the sugars dissolve and the mixture comes to a gentle boil. Let it simmer for about 5 minutes, stirring occasionally.

You can test the stage by dropping a small amount of the mixture into a glass of cold water. It should form a soft ball that can be easily flattened with your fingers.
Remove the saucepan from the heat and let the mixture cool for a minute or two. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto parchment paper or a silicone mat. Let the pralines cool completely and harden at room temperature for about 30-45 minutes.
