In a food processor, combine 2 cups of fresh basil leaves, 1/2 cup of pine nuts, 3 cloves of garlic, 1/2 cup of grated Parmesan cheese, and 1/4 cup of olive oil. Blend until smooth and creamy. If the mixture is too thick, you can add more olive oil to reach your desired consistency.
Bring a large pot of salted water to a boil. Add 1 pound of pasta (such as spaghetti or fusilli) and cook according to the package instructions until al dente. Drain the pasta and set aside.
In a large mixing bowl, toss the cooked pasta with the prepared pesto sauce until every strand is coated in green goodness. Don't be shy, be generous with the pesto!
Sprinkle some extra grated Parmesan cheese on top and add a handful of toasted pine nuts for a delightful crunch. Serve the pesto pasta in a big bowl or platter and watch your guests' eyes light up with joy!
