In a bowl, combine 2 cups of boiled and mashed potatoes, 1/2 cup of cooked peas, 1/4 cup of chopped onions, 2 finely chopped green chilies, 1/2 teaspoon of grated ginger, 1/2 teaspoon of cumin powder, 1/2 teaspoon of coriander powder, 1/2 teaspoon of garam masala, a pinch of turmeric powder, and salt to taste. Mix everything well until all the flavors mingle.
In a separate bowl, mix together 2 cups of all-purpose flour, 2 tablespoons of vegetable oil, and a pinch of salt. Gradually add water and knead the mixture into a stiff dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
Take a small portion of the dough and roll it into a thin, round circle. Cut the circle in half. Take one half and fold it into a cone shape, sealing the edges with a little water. Fill the cone with the prepared filling, around 1-2 tablespoons. Seal the open edge with water to secure the samosa. Repeat this process with the remaining dough and filling.
Heat oil in a deep pan or kadhai on medium heat. Once the oil is hot, carefully drop the samosas in batches and fry them until they turn golden brown and crispy. Remove the samosas and place them on a kitchen towel to absorb any excess oil.
Your samosas with a twist are now ready to be devoured! Serve them hot with your favorite chutney or sauce. Get ready for a burst of flavors in every bite!
