Heat a large, oven-safe skillet over medium heat. Add a drizzle of olive oil and sauté diced onions until soft and translucent, about 5 minutes.
Add crushed garlic, paprika, cumin, and a pinch of red pepper flakes to the skillet. Stir everything together and let the spices bloom for a minute or two.
Pour in a can of diced tomatoes with their juices. Stir well and let the mixture simmer for about 10 minutes, until it starts to thicken slightly.
Using a spoon, create small wells in the tomato sauce. Crack an egg into each well. Sprinkle crumbled feta cheese over the top.
Transfer the skillet to a preheated oven and bake at 375°F (190°C) for about 10-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
Remove the skillet from the oven, garnish with freshly chopped parsley, and serve the shakshuka directly from the pan. Don't forget some crusty bread for dipping!
