Take note
Be careful not to over bake the granola bars as they can become too crunchy. Also, make sure to let them cool completely before cutting into bars to ensure they hold their shape.
First things first, let's gather all the ingredients we'll need for our granola bars. Here's what you'll need: oats, honey, peanut butter, chia seeds, pumpkin seeds, sunflower seeds, dried cranberries, and mini chocolate chips.
In a large bowl, combine the oats, chia seeds, pumpkin seeds, sunflower seeds, dried cranberries, and mini chocolate chips. Give it a good stir to make sure everything is evenly distributed.
In a small saucepan, heat the honey and peanut butter over low heat until they melt together and become smooth. Stir constantly to prevent burning.
Pour the melted honey and peanut butter mixture into the bowl with the dry ingredients. Stir well to fully coat the oats and seeds with the mixture.
Line a square baking pan with parchment paper. Transfer the granola mixture into the pan and press it down firmly using the back of a spatula or your hands.
Place the pan in the refrigerator and let it chill for at least 2 hours, or until the mixture has set. Once set, remove the pan from the fridge and use a sharp knife to slice the granola into bars.
