Be careful not to overbake the granola bars, as they can become too hard. Also, make sure to let them cool completely before cutting into bars, or they may crumble.
Gather 1 cup of nuts (e.g., almonds, cashews, walnuts), 1 cup of unsweetened shredded coconut, 1/4 cup of honey (or maple syrup for a vegan option), 1/4 cup of nut butter (e.g., almond butter, peanut butter), 1/4 cup of coconut oil (melted), 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt.
In a large bowl, combine the nuts and shredded coconut. In a separate microwave-safe bowl, mix the honey (or maple syrup), nut butter, melted coconut oil, vanilla extract, and salt. Microwave for 20-30 seconds, or until the mixture is warm and easier to stir. Pour the warm mixture over the nuts and coconut, and stir until everything is well coated.
Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper. Transfer the mixture from the bowl into the lined baking dish, and press it down firmly to create an even layer. Bake for 18-20 minutes, or until the edges turn golden brown. Remove from the oven and let it cool completely.
Once the granola bar mixture has cooled completely, use a sharp knife to cut it into bars of your desired size. Store the grain-free granola bars in an airtight container, and grab one whenever you need a satisfying and healthy snack!
